Anday ka Halwa

 

Ingredients

 

Eggs 2
Milk 2 1/2 cup
Sugar 3/4  cup
Zarday ka Rang (yellow color) A pinch
Ghee 1/2 cup
Suji 1/2 cup
Kajoo / Pista / Badam For topping
Green Cardimum (sabz illaichi) 4 - 5

 

Method

 

  • Take little ghee in a pan and melt it.
  • Roast kajoo/ pista/almonds in that ghee. If using almonds than boil and peel them first and then lightly roast them.
  • In another pot take 1/2 cup  ghee and melt it.
  • Add 2 green cardimums. When slightly fried add suji and bhoon it. Don’t let suji burn.
  • In blender take milk. Add zarday ka rang, sugar,2eggs and cardimums.Blend all these ingredients together.
  • When suji changes into a light color gradually pour the blended mixture to avoid lumps and mix continuously.
  • Keep stirring and allow it to turn thick.
  • When halwa starts leaving the sides of the pot and gets collected in the centre its a sign that halwa is ready
  • Take it out in a platter and garnish with roasted kajoos/pista/almonds.
  • Yummy halwa is ready to serve and eat.

Beef Tikka Boti

 

Ingredients

 

Beef Boti (boneless) 1.5 kg
Papaya Paste 3 tbsp
Red Chili Powder 2 tsp full
Salt 1 1/2 tsp
Garam Masala 1 tsp
Lemon 1
Gingergarlic Paste 3 tsp
Onion (fried brown and blended to form a paste) 2
Zarday ka Rang 1/4 tsp

 

Method

 

  • Marinate beef overnight with all the above mentioned ingredients.
  • Turn on flame and add 3-4 tbsp oil in a pot.
  • Add this marinated beef in the pot.
  • Mix well , cover and allow the beef to cook in its own water.
  • Mean while burn a coal on the stove.
  • Once the beef water dries and gets cooked.
  • Keep a slice of bread in the center.
  • Now place the burning coal on the bread and pour oil.
  • When dhooan comes out, quickly cover it and leave it for a while.
  • Serve hot yummy beef tikka boti  in a nice platter!

Chicken Fajita Pizza

 

Pizza Dough

 

Flour (maida) 2.5 cups
Salt 1/4-1/2 tsp
Luke Warm Milk 1 cup
Oil 5-6 tbsp
Sugar 2 tbsp
Yeast 1 sache (1 tbsp heaped)


Method

 

  • In 1 cup luke warm milk add sugar, 1 sache of yeast. Stir and keep it for 1 and a half minutes.
  • When bubbles start coming in milk, add it in flour (salt included) and turn it into a dough.
  • Apply oil, punch the dough and keep it in a warm dry place for 2-3 hours. The dough will rise.
  • The dough is ready to be used.

Pizza Sauce

 

Olive Oil 2 tbsp
Tomato Ketchup 4 tbsp
Soya Sauce 2 tbsp
Tabesco Sauce/ Chillie Sauce 2 tsp
Brown Sugar 1 tbsp
Oregano 1/4 tsp


Method

 

  • Take olive oil in a pan.
  • Add tomato ketchup, soya sauce, brown sugar and mix all well. and cook.

Pizza Mixture

 

Chicken (boneless) 500 gms
Garlic Pieces 1/2 tbp
Soya Sauce 2 tbsp
Tabasco Sauce/Chili Sauce 2 tbsp
Salt 1/2 tsp
Black-pepper 1 tsp


Method

 

  • Marinate chicken with above mentioned ingredients.
  • Take oil in a pot. Add above marinated chicken pieces.
  • Mix all  well, and allow the chicken to cook in steam.

Final Pizza Preparation

 

  • Once all above things are ready, knead the dough again, make a roti (pizza base)  and place it in a greased pan.
  • Now on this pizza base apply the above prepared pizza sauce.
  • Add the above prepared chicken mixture
  • Now put a layer of green onion, capsicum slices and tomato slices.
  • Now put a layer of mozzarella cheese
  • Garnish 1/2 tsp herbs (optional)
  • Now in pre-heated oven at 180 degree centigrade
  • Keep it for 15 –20 minutes till the cheese melts

Shahi Tukray

 

Ingredients

 

Milk 1 litre
Sugar 1 cup
Desi Ghee 1 cup
Zarday ka Rang (yellow color) A pinch
Flour (maida) 1 cup
Almonds, Pistachio, Kaajoo As required
Rooh Khewra (rose water) For fragrance
Green Cardimum (sabz illaichi) 6
Khoya/Kalaqand For garnishing

 

Method

 

  • Remove edges of bread slices, cut them in triangular shape.
  • Fry the bread slices until brown.
  • In 1 litre milk add a pinch of yellow color and 6 green cardimums.
  • Mix all well and allow it to boil.
  • When milk gets thick after 20-25 minutes add sugar to it.
  • Once done pour the milk over the bread slices.
  • For 5 minutes allow the bread to soak and absorb the milk.
  • Sprinkle dry fruits.
  • Now add khoya/kalaqand and sprinkle some more dry fruits.
  • Pour  little amount of rooh khewra for fragrance.
  • Yummy Scrummy Shahi Tukray are ready to serve!
